Ingredients

Meat

  • 1 pound ground beef (90% lean, preferably grass-fed)
  • 1 tablespoon olive oil (extra-virgin for richer flavor)
  • 1 medium yellow onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon cumin (ground)
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon chili powder (adjust to taste)
  • 0.5 teaspoon sea salt (or to taste)

Rice

  • 2 cups white rice (cooked jasmine or long grain)

Vegetables

  • 2 medium avocados (ripe, peeled, pitted, sliced)
  • 1 cup cherry tomatoes (halved)
  • 0.25 cup cilantro (roughly chopped)
  • 1 medium lime (cut into wedges)

Instructions 

  • Heat olive oil in a large skillet over medium heat. Add chopped onion and cook for 3-4 minutes until softened.
  • Add minced garlic and sauté for 30 seconds until fragrant. Increase heat to medium-high, add ground beef, and cook for 7-8 minutes until browned.
  • Stir in cumin, smoked paprika, chili powder, and sea salt. Cook for 1-2 minutes until spices are aromatic. Meanwhile, reheat or prepare rice.
  • Assemble bowls with rice, topped with spiced beef, avocado slices, cherry tomatoes, and cilantro. Serve with lime wedges on the side.

Notes

For extra flavor, squeeze fresh lime juice over the bowls before serving.
