Beef Stir-Fry with Seasoned Vegetable Fried Rice

A quick and flavorful Asian-inspired dish combining tender beef, colorful vegetables, and savory fried rice.

Ingredients

Beef and Marinade

  • 1 lb beef sirloin or flank steak (thinly sliced)
  • 1 tablespoon cornstarch
  • 2 tablespoons soy sauce low sodium
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil for frying
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, grated
  • 0.5 cup green bell pepper, chopped
  • 0.5 cup red bell pepper, chopped
  • 0.5 cup yellow bell pepper, chopped
  • 0.25 cup green peas, fresh or frozen
  • 0.25 cup carrots, julienned (optional for topping)

Cooked Rice

  • 2 cups cooked rice, preferably day-old
  • 0.25 cup frozen mixed vegetables (corn, peas, diced carrots)
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 egg optional, scrambled

Seasoning

  • to taste Salt and pepper

Instructions 

  • Marinate the beef: combine beef slices with cornstarch, soy sauce, and sesame oil; let sit for 15 minutes.
  • Stir-fry vegetables: heat 1 tbsp oil, cook garlic and ginger 30 seconds, add bell peppers and peas, stir for 3-4 minutes.
  • Cook beef: push vegetables aside, add beef, cook 3-4 minutes until browned.
  • Add sauces: stir in oyster and hoisin sauces, cook 2 minutes.
  • Prepare rice: in another pan, heat 2 tbsp oil, stir-fry frozen vegetables 2-3 minutes, scramble egg if using, then add rice and soy sauce, stir-fry 5 minutes, season with salt and pepper.

Notes

Use day-old rice for best results and adjust seasoning to taste.
