Beef Stir Fry with Vegetables

A quick and flavorful beef stir fry loaded with colorful vegetables, perfect for a weeknight dinner.

Ingredients

Meat

  • 1 lb beef sirloin, thinly sliced against the grain
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil

Vegetables

  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 cup broccoli florets
  • 1 carrot thinly sliced
  • 1 small yellow onion sliced
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 0.75 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon sesame oil
  • 0.5 cup beef broth
  • 0.5 cup cornstarch mixed with cold water slurry

Instructions 

  • Slice beef against the grain, toss with cornstarch, and set aside. Prepare vegetables and sauce ingredients.
  • Whisk soy sauce, oyster sauce, brown sugar, sesame oil, beef broth, and cornstarch slurry to make the sauce. Set aside.
  • Heat 1 tablespoon oil in a skillet, sear beef for 2-3 minutes until browned, then remove.
  • In the same pan, add remaining oil, sauté garlic and ginger for 30 seconds, then add onions, carrots, broccoli; stir-fry 2-3 minutes. Add bell peppers and cook another 2-3 minutes.
  • Return beef to pan, pour in sauce, and cook 2-3 minutes until thickened. Serve hot over rice or noodles.

Notes

For a low-carb option, serve over cauliflower rice instead of traditional rice.
