Instructions
Preheat oven to 425ºF and line a sheet pan with parchment.
Blend cottage cheese, 3/4 cup (180g) of enchilada sauce, and 1 oz (28g) of cheese until smooth.
Cook beef, add taco seasoning, then stir in blended sauce.
Warm tortillas until pliable, then fill with beef mixture and roll tightly.
Arrange rolled tortillas on pan, top with remaining sauce, and sprinkle cheese.
Bake for 10-12 minutes until cheese melts and edges brown.
Notes
For a spicier flavor, add hot sauce or jalapeños.
