Delicious and hearty enchiladas packed with lean beef, cottage cheese, and melted cheese, perfect for a satisfying meal.

Ingredients

Meat and Dairy

  • 1 pound Extra Lean Ground Beef
  • 1 packet Taco Seasoning
  • 1 cup Low Fat Cottage Cheese
  • 1.5 cups Red Enchilada Sauce
  • 10 Corn Tortillas Corn Tortillas
  • 6 oz Shredded Pepper Jack or Colby Jack Cheese

Instructions 

  • Preheat oven to 425ºF and line a sheet pan with parchment.
  • Blend cottage cheese, 3/4 cup (180g) of enchilada sauce, and 1 oz (28g) of cheese until smooth.
  • Cook beef, add taco seasoning, then stir in blended sauce.
  • Warm tortillas until pliable, then fill with beef mixture and roll tightly.
  • Arrange rolled tortillas on pan, top with remaining sauce, and sprinkle cheese.
  • Bake for 10-12 minutes until cheese melts and edges brown.

Notes

For a spicier flavor, add hot sauce or jalapeños.
