Instructions
Season the short ribs with salt and pepper.
Heat oil in a large pot and brown the ribs on all sides.
Add chopped vegetables and garlic; cook until softened.
Stir in tomato paste, then pour in Guinness and beef stock; add thyme and bay leaves.
Bring to a simmer, cover, and cook on low for 2.5 hours until meat is tender.
Notes
For extra flavor, let the ribs rest for 10 minutes before serving.
