Ingredients

Meat

  • 2.5 lbs beef short ribs

Seasonings

  • 1 teaspoon fine sea salt
  • 0.5 teaspoon ground black pepper

Vegetables

  • 1 tablespoon vegetable oil
  • 1 medium onion (5.5 oz/ 150 g, finely chopped)
  • 1 medium carrot (3.5 oz/ 100 g, finely chopped)
  • 2 ribs celery (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon tomato paste

Liquids

  • 1 bottle Guinness (11 fl.oz/ 330 ml)
  • 1.25 cups beef stock (low sodium)
  • 1 teaspoon thyme
  • 1 teaspoon balsamic vinegar (more to taste)

Salt and black pepper (to taste)

Instructions 

  • Season the short ribs with salt and pepper.
  • Heat oil in a large pot and brown the ribs on all sides.
  • Add chopped vegetables and garlic; cook until softened.
  • Stir in tomato paste, then pour in Guinness and beef stock; add thyme and bay leaves.
  • Bring to a simmer, cover, and cook on low for 2.5 hours until meat is tender.

Notes

For extra flavor, let the ribs rest for 10 minutes before serving.
