Preheat oven to 400°F (200°C). Beat cream cheese, sugar, and jam until blended. Fold in whipped cream and food coloring if desired. Refrigerate.
Whisk sugar, flour, and salt; stir in egg whites and vanilla until smooth. Mix in melted butter. Line baking sheets with parchment.
Drop batter by 1/2 teaspoon onto prepared pans, 4 inches apart. Bake 5-8 minutes until edges are lightly browned.
Loosen cookies, curl around a wooden spoon handle, press lightly to seal, and hold 20 seconds. Cool on waxed paper. Repeat with remaining batter. Reheat if needed to soften.
Fill cookies with berry cream, pipe or spoon filling. Dip cookie ends into chopped strawberries if desired. Refrigerate leftovers.
