A nutritious and delicious breakfast bowl combining protein-rich quinoa with fresh berries, nuts, and creamy yogurt for a perfect start to your day.

Ingredients

Quinoa

  • 0.5 cup white quinoa
  • 0.75 cup unsweetened almond milk (or your favorite kind of milk)
  • 1.5 cups frozen mixed berries (see notes if you want to use fresh berries)
  • 2 tbsp maple syrup
  • 0.25 tsp cinnamon
  • 0.5 tsp vanilla extract
  • 0.25 cup Greek yogurt (omit or substitute with coconut yogurt to make vegan)
  • 0.25 small banana
  • 1 tbsp chopped nuts (I used almonds or hazelnuts)
  • 0.5 tsp chia seeds

Instructions

  • Place quinoa in a fine-mesh strainer and rinse thoroughly with cool water for at least 2 minutes. Drain.
  • Transfer quinoa to a medium saucepan, cover with 1 cup of water, bring to a boil, then reduce heat and cook for 15 minutes until tender and water is absorbed.
  • Stir in almond milk, berries, maple syrup, cinnamon, and vanilla. Cook on medium heat, stirring often, for about 20 minutes until thickened and liquid is absorbed. Crush berries to incorporate.
  • Divide the mixture into two bowls and top with Greek yogurt, banana slices, chopped nuts, and chia seeds. Add additional toppings if desired and serve with extra milk if preferred.

Notes

You can customize toppings with fresh fruits, toasted coconut, or other nuts for variety.
