Chocolate and Cream

Dark chocolate (60–70% cacao) (chopped)

Instructions
Heat sugar, water, and corn syrup gently for 2–3 minutes until syrup is smooth.
Melt chopped chocolate with ½ cup cream over a double boiler until smooth.
Pour warm syrup into melted chocolate, stir until combined, then cool slightly.
Whip chilled heavy cream until soft peaks form.
Fold whipped cream into chocolate mixture, spoon into cups, chill, then garnish with whipped cream and cocoa powder if desired.
