Instructions
Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
In a large bowl, whisk together dry ingredients: flour, baking powder, baking soda, cinnamon, allspice, and salt.
In another bowl, beat eggs, then mix in applesauce, maple syrup, melted oil, and vanilla.
Combine wet and dry ingredients, then fold in grated apple and nuts if using.
Divide batter among muffin cups, sprinkle with coarse sugar, and bake for 20 minutes.
Notes
