Instructions
Season chicken thighs with salt, pepper, and half the lemon zest.
Heat olive oil in a large pan and brown the chicken thighs until golden, then remove and set aside.
Sauté diced onion and minced garlic in the same pan until fragrant. Add rice, dried oregano, and thyme, cooking briefly.
Pour in chicken stock, add the browned chicken, and bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
Stir in spinach and lemon juice, cook until spinach wilts. Garnish with chopped parsley and lemon slices before serving.
Notes
For extra flavor, marinate the chicken with lemon and herbs beforehand.
