A flavorful one-pan dish combining tender chicken thighs, fragrant herbs, and vibrant lemon, served over fluffy rice and spinach.

Ingredients

Protein

  • 5 pieces chicken thighs (skin-on and bone-in)
  • 2 tablespoons olive oil
  • 2 lemons lemons (juiced and zested) ((approx 1/4 cup of juice))
  • 2 teaspoons Dijon Mustard
  • 3 cloves garlic cloves (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Vegetables & Rice

  • 1 tablespoon olive oil
  • 1 yellow onion yellow onion (diced)
  • 2 cups baby spinach (roughly chopped)
  • 2 cloves garlic cloves (minced)
  • 1 teaspoon dried oregano
  • 1 cup long grain white rice
  • 2 cups chicken stock
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Garnish

  • to taste chopped parsley (for garnish)
  • to taste lemon zest or slices (for garnish)

Instructions 

  • Season chicken thighs with salt, pepper, and half the lemon zest.
  • Heat olive oil in a large pan and brown the chicken thighs until golden, then remove and set aside.
  • Sauté diced onion and minced garlic in the same pan until fragrant. Add rice, dried oregano, and thyme, cooking briefly.
  • Pour in chicken stock, add the browned chicken, and bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
  • Stir in spinach and lemon juice, cook until spinach wilts. Garnish with chopped parsley and lemon slices before serving.

Notes

For extra flavor, marinate the chicken with lemon and herbs beforehand.
