Ingredients

  • 2 tbsp olive oil
  • 1 small yellow onion, chopped
  • 2 cloves garlic, finely chopped
  • 1 tsp minced fresh ginger
  • 1 tbsp curry powder (mild)
  • 0.5 tsp garam masala
  • 3 cups vegetable broth
  • 1 can (14 oz) coconut milk (more for garnish as needed)
  • 3 cups pureed pumpkin or butternut squash

  • to garnish Toasted pumpkin seeds
  • to garnish Chopped fresh cilantro

Instructions 

  • Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent.
  • Add garlic, ginger, curry powder, and garam masala; cook for 1-2 minutes until fragrant.
  • Pour in vegetable broth and coconut milk, then stir in pumpkin puree. Bring to a simmer.
  • Simmer for 15 minutes, then season with salt and pepper to taste.
  • Serve hot, garnished with toasted pumpkin seeds and chopped cilantro.

Notes

This soup pairs well with crusty bread and can be made vegan by ensuring the coconut milk is dairy-free.
