This flavorful roasted chicken is infused with lemon and garlic, resulting in a juicy and crispy dish perfect for any occasion.

Ingredients

  • 1.5 kg Chicken (Whole chicken)
  • 2 lemons Lemons (Juiced and sliced for serving)
  • 4 cloves Garlic (Minced)
  • 3 tablespoons Extra virgin olive oil
  • 1 teaspoon Thyme or rosemary (optional)
  • to taste Salt and pepper

Instructions 

  • Marinate the chicken with lemon juice, minced garlic, olive oil, salt, and pepper for at least 30 minutes.
  • Preheat the oven to a high temperature (around 220°C / 425°F).
  • Place the marinated chicken in a roasting pan and roast until skin is crispy and meat is cooked through, about 60 minutes.
  • Baste occasionally during roasting to keep it moist.
  • Let the chicken rest for 10-15 minutes before slicing. Serve with lemon wedges and fresh herbs.

For extra flavor, add fresh herbs during roasting or garnish before serving.
