A delicious and comforting sweet potato casserole perfect for holidays or any special occasion.

Instructions
Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake for 50-60 minutes until soft.
Scoop out the cooked sweet potatoes and mash. Mix in melted butter, sugar, eggs, vanilla, cinnamon, salt, and half-n-half until smooth.
Spread the mixture evenly in a 9x13 inch baking dish and bake for 20-25 minutes.
Notes
For a crunchy topping, sprinkle with chopped pecans or marshmallows before baking.
