A delicious and comforting sweet potato casserole perfect for holidays or any special occasion.

Ingredients

Sweet Potatoes

  • 3 lbs Sweet Potatoes (about 5-6 medium)
  • 6 tablespoons Butter (melted)
  • 1/2 cup Sugar
  • 2 large Eggs
  • 2 teaspoons Vanilla Extract
  • 1 teaspoon Cinnamon
  • 1 teaspoon Salt (reduce to 1/2 teaspoon if using salted butter)
  • 1/4 cup Half-n-Half
  • 3 tablespoons Salted Butter (softened)
  • 1 cup Brown Sugar
  • 1/3 cup Flour

Instructions 

  • Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake for 50-60 minutes until soft.
  • Scoop out the cooked sweet potatoes and mash. Mix in melted butter, sugar, eggs, vanilla, cinnamon, salt, and half-n-half until smooth.
  • Spread the mixture evenly in a 9x13 inch baking dish and bake for 20-25 minutes.

Notes

For a crunchy topping, sprinkle with chopped pecans or marshmallows before baking.
