Ingredients

Dairy and Oils

  • 0.25 cup unsalted butter, cubed
  • 0.25 cup neutral oil (canola)
  • 1 cup semisweet chocolate chips
  • 1 teaspoon instant coffee or espresso (optional) (optional)

Dry Ingredients

  • 0.75 cup all-purpose flour (scooped and leveled)
  • 0.25 cup Dutch-process cocoa powder (sifted)
  • 0.5 teaspoon fine sea salt
  • 1 teaspoon baking powder

Wet Ingredients

  • 2 large eggs (room temperature)
  • 1 cup granulated sugar
  • 2 teaspoons vanilla

Instructions 

  • Preheat oven to 350°F (175°C). Line an 8x8-inch pan with foil and spray with cooking spray.
  • Melt butter, oil, chocolate, and coffee in microwave or double boiler; let cool slightly.
  • Whisk eggs and sugar until frothy, then mix in vanilla. Add cooled chocolate mixture and dry ingredients; stir until just combined.
  • Pour batter into prepared pan, smooth top, and bake for 25-30 minutes. Cool before cutting.

Notes

For extra fudginess, slightly underbake and let cool completely before cutting.
