Instructions
Preheat oven to 375°F (190°C) and prepare a 12-cup muffin tin.
Mix cottage cheese, eggs, honey, vanilla, and melted coconut oil until smooth.
Combine dry ingredients and whisk together.
Add dry to wet, stir gently, then fold in blueberries and add milk to loosen batter.
Fill muffin cups ¾ full and bake for 20-25 minutes.
Cool muffins in pan 5 minutes, then transfer to wire rack.
Notes
For extra flavor, add a pinch of cinnamon to the dry ingredients.
