Ingredients

Dairy

  • 1 cup cottage cheese
  • 2 large eggs
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • ¼ cup melted coconut oil (or butter)

Dry ingredients

  • 1 ½ cups flour (all-purpose or whole wheat)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon (optional)
  • 1 cup fresh or frozen blueberries
  • ¼ cup milk (any type)

Instructions 

  • Preheat oven to 375°F (190°C) and prepare a 12-cup muffin tin.
  • Mix cottage cheese, eggs, honey, vanilla, and melted coconut oil until smooth.
  • Combine dry ingredients and whisk together.
  • Add dry to wet, stir gently, then fold in blueberries and add milk to loosen batter.
  • Fill muffin cups ¾ full and bake for 20-25 minutes.
  • Cool muffins in pan 5 minutes, then transfer to wire rack.

Notes

For extra flavor, add a pinch of cinnamon to the dry ingredients.
