Delicious and nutritious blueberry protein bars with a crunchy crumble topping, perfect for a healthy snack or on-the-go energy boost.
Ingredients
Layer 1 (Crust)

gluten-free oat flour

almond flour

coconut sugar

coconut oil, melted
Layer 2 (Blueberry Filling)

blueberries

scoops
vanilla protein powder

tablespoons
lemon juice
Layer 3 (Oats topping)

gluten-free rolled oats

coconut sugar

tablespoons
coconut oil, melted
Instructions
Preheat oven to 350°F (180°C). Line an 8×8” pan with parchment.
Mix crust ingredients until crumbly; press into pan base.
Combine blueberry ingredients and spread over crust.
Mix oats topping ingredients and sprinkle over blueberries.
Bake for 30 minutes until golden; cool before slicing.
Slice into 16 bars and enjoy!

Store in an airtight container for up to 3 days.
