Delicious and nutritious blueberry protein bars with a crunchy crumble topping, perfect for a healthy snack or on-the-go energy boost.

Ingredients

Layer 1 (Crust)

  • 1 cup gluten-free oat flour
  • ¼ cup almond flour
  • ¼ cup coconut sugar
  • 3 tablespoons coconut oil, melted

Layer 2 (Blueberry Filling)

  • 3 cups blueberries
  • 2 scoops vanilla protein powder
  • 2 tablespoons lemon juice

Layer 3 (Oats topping)

  • ¾ cup gluten-free rolled oats
  • ¼ cup coconut sugar
  • 2 tablespoons coconut oil, melted

Instructions 

  • Preheat oven to 350°F (180°C). Line an 8×8” pan with parchment.
  • Mix crust ingredients until crumbly; press into pan base.
  • Combine blueberry ingredients and spread over crust.
  • Mix oats topping ingredients and sprinkle over blueberries.
  • Bake for 30 minutes until golden; cool before slicing.
  • Slice into 16 bars and enjoy!

Notes

Store in an airtight container for up to 3 days.
