Blueberry French Toast Casserole

A delicious overnight breakfast casserole combining blueberries, cream cheese, and cinnamon, topped with a sweet buttermilk syrup.

Ingredients

Bread and Dairy

  • 12 slices French bread, cut in 1-inch cubes
  • 8 ounces cream cheese, chilled and cut in 1-inch cubes
  • 1 pint fresh blueberries, rinsed and drained
  • 12 large eggs eggs
  • cup maple syrup
  • 2 cups milk
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla
  • 1 cup sugar (for buttermilk syrup)
  • ½ cup butter (for buttermilk syrup)
  • ½ cup buttermilk (for buttermilk syrup)
  • ½ teaspoon baking soda (for buttermilk syrup)
  • ½ tablespoon vanilla (for buttermilk syrup)
  • couple of grinds sea salt sea salt (for buttermilk syrup)

Instructions 

  • Grease a 9x13 inch baking pan and layer half of bread cubes.
  • Scatter cream cheese cubes and blueberries over bread, then top with remaining bread cubes.
  • Whisk eggs, syrup, milk, vanilla, and cinnamon; pour over the layered bread. Cover and chill overnight.
  • Preheat oven to 350°F (175°C). Bake covered for 40 minutes, then uncover and bake 30 more minutes until golden.
  • Prepare buttermilk syrup by boiling sugar, butter, and buttermilk; add baking soda, vanilla, and salt. Serve warm.

Notes

For best results, prepare the casserole the night before and bake fresh in the morning.
