Delight in these creamy Greek yogurt bites topped with fresh blueberry compote, perfect for a healthy snack or dessert.

Ingredients

Dairy

  • 1.5 cups plain Greek yogurt
  • 1 tablespoon honey or maple syrup
  • 0.5 teaspoon vanilla extract
  • 0.75 cup fresh or frozen blueberries
  • 1 teaspoon lemon juice
  • 1 teaspoon honey (optional) (for blueberry compote)
  • 1 teaspoon chia seeds (optional)

Instructions 

  • Cook blueberries, lemon juice, and optional honey in a small saucepan over medium heat for 5-6 minutes.
  • Mix Greek yogurt, vanilla extract, and honey until smooth.
  • Fill each cavity of a silicone mini muffin tray with yogurt mixture.
  • Add cooled blueberry compote on top and swirl with a toothpick.
  • Freeze for at least 2 hours until firm, then remove from molds and thaw slightly before serving.

Notes

For best results, use fresh blueberries when in season.
