Delicious and healthy blueberry oat pancakes perfect for a quick breakfast or brunch.

Ingredients

Dry ingredients

  • 1 cup rolled oats
  • 1 cup milk (dairy or plant-based)
  • 1 ripe banana banana (mashed)
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh blueberries
  • Pinch salt salt

For cooking

  • butter or oil (for frying)

Instructions 

  • Blend oats, milk, banana, baking powder, vanilla, and salt until smooth.
  • Gently fold in blueberries.
  • Heat a skillet with butter or oil over medium heat.
  • Pour 1/4 cup batter for each pancake; cook until bubbles form, then flip and cook until golden.
  • Serve warm with additional blueberries and maple syrup.

Notes

For extra flavor, add a dash of cinnamon or nutmeg to the batter.
