Delicious and healthy blueberry oat pancakes perfect for a quick breakfast or brunch.
Ingredients
Dry ingredients

rolled oats

milk (dairy or plant-based)

ripe banana
banana
(mashed)

vanilla extract

fresh blueberries

Instructions
Blend oats, milk, banana, baking powder, vanilla, and salt until smooth.
Gently fold in blueberries.
Heat a skillet with butter or oil over medium heat.
Pour 1/4 cup batter for each pancake; cook until bubbles form, then flip and cook until golden.
Serve warm with additional blueberries and maple syrup.
Notes
For extra flavor, add a dash of cinnamon or nutmeg to the batter.
