Delicious and easy-to-make blueberry oatmeal crumble bars perfect for a sweet snack or dessert.

Ingredients

Dough and Crumble

  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned oats ((large flake oats, not quick oats))
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter ((melted))
  • 1 large egg yolk ((discard the egg white))
  • 1 tablespoon packed brown sugar

Filling

  • 2 cups blueberries ((fresh or frozen))
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1/4 cup granulated sugar
  • 2 teaspoons cornstarch

Instructions 

  • Preheat oven to 350°F (175°C). Line an 8x8 inch pan with parchment paper or foil, leaving overhang.
  • Mix flour, oats, sugars, cinnamon, and salt. Add melted butter and egg yolk; combine to form crumbly dough.
  • Press half of the mixture into the prepared pan for the crust.
  • In a bowl, toss blueberries with lemon juice, sugar, and cornstarch. Spread over crust.
  • Sprinkle remaining crumble mixture over the filling. Bake for 25 minutes until golden.

Store in an airtight container for up to 3 days.
