Ingredients
Dough and Crumble

old-fashioned oats
((large flake oats, not quick oats))

granulated sugar

packed brown sugar

cinnamon

salt

unsalted butter

egg yolk
((discard the egg white))

packed brown sugar
Filling

cups
blueberries
((fresh or frozen))

tablespoon
lemon juice
(freshly squeezed)

granulated sugar

cornstarch
Instructions
Preheat oven to 350°F (175°C). Line an 8x8 inch pan with parchment paper or foil, leaving overhang.
Mix flour, oats, sugars, cinnamon, and salt. Add melted butter and egg yolk; combine to form crumbly dough.
Press half of the mixture into the prepared pan for the crust.
In a bowl, toss blueberries with lemon juice, sugar, and cornstarch. Spread over crust.
Sprinkle remaining crumble mixture over the filling. Bake for 25 minutes until golden.
