Instructions
Season chicken with salt and pepper.
Heat oil and butter in a skillet, cook chicken until golden, then set aside.
Sauté onion, add garlic and orzo, toast for 1 minute.
Pour broth, simmer 10-12 minutes until orzo is al dente.
Stir in Boursin cheese, add chicken and spinach, cook until spinach wilts. Serve garnished with parsley.
Notes
For extra flavor, sprinkle with additional herbs or cheese before serving.
