A creamy and flavorful dish combining tender chicken, orzo pasta, and Boursin cheese, perfect for a comforting meal.

Ingredients

Oil & Butter

  • 1 tbsp Olive Oil
  • 1 tbsp Unsalted Butter

Chicken

  • 1.5 lbs Boneless, Skinless Chicken Breast (cut into 1-inch cubes)
  • 1 tsp Salt (or to taste)
  • 0.5 tsp Black Pepper (or to taste)

Vegetables

  • 1 small Yellow Onion (finely diced)
  • 4 cloves Garlic (minced)

Pasta

  • 1.5 cups Orzo Pasta (uncooked)

Broth

  • 4 cups Low-Sodium Chicken Broth

Cheese

  • 5.2 oz Boursin Cheese, Garlic & Fine Herbs (softened)

Greens & Herbs

  • 3 cups Fresh Spinach (packed)
  • 2 tbsp Fresh Parsley (chopped, for garnish (optional))

Instructions 

  • Season chicken with salt and pepper.
  • Heat oil and butter in a skillet, cook chicken until golden, then set aside.
  • Sauté onion, add garlic and orzo, toast for 1 minute.
  • Pour broth, simmer 10-12 minutes until orzo is al dente.
  • Stir in Boursin cheese, add chicken and spinach, cook until spinach wilts. Serve garnished with parsley.

Notes

For extra flavor, sprinkle with additional herbs or cheese before serving.
