Enjoy a hearty and flavorful breakfast with these homemade burritos filled with chorizo, eggs, potatoes, and cheese.

Ingredients

Tortillas

  • 4 pieces burrito-sized flour tortillas
  • 1 package 8-oz Mexican chorizo
  • 10 ounces shredded potatoes (see note)
  • 8 eggs whisked eggs
  • 0.5 cup shredded cheddar cheese
  • 0.5 cup shredded Monterey jack cheese
  • 2 tablespoons unsalted butter (divided)
  • 1 teaspoon salt (divided)
  • 0.5 teaspoon black pepper (divided)
  • 1 tablespoon chopped parsley or cilantro (optional)

Instructions 

  • Cook chorizo in a skillet over medium heat for 8-10 minutes, then drain excess fat and transfer to a bowl.
  • Melt 1 tablespoon of butter in the same skillet, add whisked eggs, season with salt and pepper, and cook until soft but set, about 10 minutes. Mix in cheeses until melted, then transfer to a bowl.
  • In the same skillet, melt remaining butter, add shredded potatoes, season, and cook until golden and crispy, about 10 minutes.
  • Warm tortillas, then evenly distribute potatoes, eggs, and chorizo among them. Add parsley or cilantro if desired, roll tightly, wrap in foil, and warm in oven for 5-10 minutes before serving.

Notes

For extra flavor, add hot sauce or salsa when serving.
