Ingredients
Tortillas
4piecesburrito-sized flour tortillas
1package8-oz Mexican chorizo
10ouncesshredded potatoes(see note)
8eggswhisked eggs
0.5cupshredded cheddar cheese
0.5cupshredded Monterey jack cheese
2tablespoonsunsalted butter(divided)
1teaspoonsalt(divided)
0.5teaspoonblack pepper(divided)
1tablespoonchopped parsley or cilantro(optional)
Instructions
Cook chorizo in a skillet over medium heat for 8-10 minutes, then drain excess fat and transfer to a bowl.
Melt 1 tablespoon of butter in the same skillet, add whisked eggs, season with salt and pepper, and cook until soft but set, about 10 minutes. Mix in cheeses until melted, then transfer to a bowl.
In the same skillet, melt remaining butter, add shredded potatoes, season, and cook until golden and crispy, about 10 minutes.
Warm tortillas, then evenly distribute potatoes, eggs, and chorizo among them. Add parsley or cilantro if desired, roll tightly, wrap in foil, and warm in oven for 5-10 minutes before serving.
Notes
For extra flavor, add hot sauce or salsa when serving.
