Ingredients

Bread

  • 6 slices thick slices of day-old brioche bread
  • 3 large eggs
  • 0.75 cup whole milk or half and half
  • 2 tbsp heavy cream
  • 2 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 0.5 tsp cinnamon
  • Pinch salt

Butter

  • as needed butter, for the pan
  • 1.5 cups fresh strawberries, hulled and sliced
  • 1 tbsp sugar
  • 0.5 tsp lemon juice
  • 0.5 tsp vanilla extract
  • 0.5 cup heavy whipping cream, cold
  • 1 tbsp powdered sugar
  • 0.5 tsp vanilla extract

Instructions 

  • Combine strawberries, sugar, lemon juice, and vanilla; set aside.
  • Whip cold heavy cream with powdered sugar and vanilla until soft peaks form; chill.
  • Whisk eggs, milk, cream, syrup, vanilla, cinnamon, and salt in a shallow dish.
  • Preheat skillet, dip brioche slices in custard for 15-20 seconds per side, then cook 2-3 minutes per side until golden.
  • Plate French toast, top with strawberries and whipped cream, drizzle with syrup.

Notes

Use day-old brioche for best texture and flavor.
