A comforting baked casserole combining rice, broccoli, and cheddar cheese, perfect for a family dinner.
Ingredients
Rice and Broccoli

cooked rice (about 1 cup uncooked)

frozen broccoli florets (16 oz.)

onion, finely chopped

cream of mushroom soup (10 3/4 oz.)

shredded cheddar cheese, divided
Instructions
Thaw broccoli and microwave for 5 minutes; drain well. Cut large florets into smaller pieces.
Mix cooked rice, onion, mushroom soup, milk, salt, pepper, garlic powder, paprika, and 1 cup cheese. Fold in broccoli.
Spoon mixture into a greased 9x13-inch dish. Top with remaining cheese.
Bake at 350°F (175°C) for 35-40 minutes until bubbly and golden.
For make-ahead, assemble, refrigerate, and bake longer (60-75 min). Cover with foil if cheese browns too much.
Notes
You can use frozen chopped broccoli instead of florets if preferred.
