  • 0.5 cup butter (unsalted, softened)
  • 2 cups peanut butter (creamy, not natural)
  • 1 teaspoon vanilla extract

  • 0.25 teaspoon sea salt (or kosher)

Chocolate coating

  • 11.5 oz milk chocolate chips (Ghirardelli)
  • 1 tablespoon coconut oil (or vegetable shortening)

Instructions

  • Mix butter and peanut butter until smooth, then add vanilla and salt.
  • Gradually add powdered sugar until dough is firm enough to roll into balls.
  • Shape into 1-inch balls, insert toothpicks, and chill for 15 minutes.
  • Melt chocolates with coconut oil, then dip each ball, leaving about 80% covered.
  • Refrigerate until chocolate is set, then remove toothpicks and smooth any holes.

Notes
