A spicy, creamy dip featuring roasted cauliflower and hot sauce, perfect for sharing at gatherings.

Ingredients

Vegetables

  • 1 head cauliflower (4 cups of florets)
  • 0.25 cup water (60ml)
  • 8 oz cream cheese (cubed and softened) (225g)
  • 1 cup sour cream (or plain yogurt) (300g)
  • 0.5 cup hot sauce (Frank’s or to taste)
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • 1 cup shredded Cheddar (100g)

Garnish

  • Chives (chopped)
  • Green onions (chopped)

Instructions 

  • Preheat oven to 375°F / 190°C.
  • Cook cauliflower and water in a skillet over medium-high heat for 7-10 minutes until soft.
  • Drain excess water, tear cauliflower apart, then cook for a few minutes to evaporate moisture.
  • Mix in cream cheese, sour cream, hot sauce, salt, pepper, then sprinkle with cheese.
  • Bake for 15 minutes until bubbling and cheese melts. Optional: broil briefly to brown top.
  • Serve warm, garnished with chopped chives and green onions.

Notes

For extra heat, add more hot sauce or red pepper flakes.
