A delicious low-carb appetizer or main dish featuring tender zucchini filled with spicy buffalo chicken and melted cheese.

Ingredients

Vegetables

  • 2 medium zucchini
  • 2 cups cooked (shredded chicken)
  • 3 ounces cream cheese
  • 1/4 cup ranch dressing
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons buffalo sauce
  • 1/4 cup shredded mozzarella cheese

Instructions 

  • Preheat oven to 350°F (175°C). Slice zucchinis and scoop out flesh to form boats.
  • Arrange zucchini halves in a baking dish. Mix chicken, cream cheese, ranch, cheddar, and buffalo sauce.
  • Fill zucchini boats with the chicken mixture and top with mozzarella cheese.
  • Bake for 20-24 minutes until zucchini is tender and cheese is golden.

Notes

For extra flavor, sprinkle with chopped green onions before serving.
