A delicious low-carb appetizer or main dish featuring tender zucchini filled with spicy buffalo chicken and melted cheese.

Instructions
Preheat oven to 350°F (175°C). Slice zucchinis and scoop out flesh to form boats.
Arrange zucchini halves in a baking dish. Mix chicken, cream cheese, ranch, cheddar, and buffalo sauce.
Fill zucchini boats with the chicken mixture and top with mozzarella cheese.
Bake for 20-24 minutes until zucchini is tender and cheese is golden.
Notes
For extra flavor, sprinkle with chopped green onions before serving.
