A flavorful baked casserole combining seasoned beef, vegetables, beans, and rice, topped with cheese and served with your favorite toppings.

Ingredients

olive oil

  • 1 tablespoon olive oil

diced onion

  • 1 cup diced onion (about 120 grams)

lean ground beef

  • 2 pounds lean ground beef (about 900 grams)

taco seasoning

  • 2 tablespoons taco seasoning

diced bell peppers

  • 2 cups diced bell peppers (about 240 grams)

black beans

  • 1 15-ounce can black beans

salsa

  • 1 cup salsa

uncooked white rice

  • 1 cup uncooked white rice (rinsed)

broth

  • 1 1/2 cups broth

shredded cheddar cheese

  • 1.5 cups shredded cheddar cheese (about 3 ounces)

salt and pepper

  • salt and pepper (to taste)

tortilla chips, tortillas

  • for servings - tortilla chips, tortillas

toppings of choice

  • shredded lettuce, diced tomatoes, sour cream, greek yogurt, avocado, salsa, lime juice, cilantro, jalapeño

Instructions 

  • Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  • Cook beef: Heat oil, sauté onions with salt and pepper, add beef, cook until browned, stir in taco seasoning, then transfer to dish.
  • Mix in peppers, beans, salsa, rice, and broth; ensure ingredients are covered and well combined.
  • Cover with foil, bake 40-45 mins, then uncover and bake 10 mins. Add cheese, bake 5 mins until melted. Rest before slicing.
  • Serve topped with your favorite toppings and enjoy!
