Instructions
Combine squash, cheese, flour, eggs, thyme, salt, and pepper in a large bowl.
Heat 2 tablespoons oil in a skillet over medium. Drop batter in 3 tablespoon portions, flatten into 3-inch circles.
Cook until golden, 3-4 minutes per side. Keep warm in a 200°F oven.
Sprinkle with salt immediately after removing from skillet. Add oil as needed during cooking. Serve warm.
