A cozy and flavorful twist on classic grilled cheese, featuring roasted butternut squash and sage for a comforting meal.
Ingredients

1/2piecebutternut squash(seeds removed)
1.5tspsextra virgin olive oil(divided)
to tastesalt and pepper
1/4tspsmoked paprika
1/4tspancho chili powder
10-12leavessage leaves
4slicessourdough bread
to tastemayonnaise(for buttering outside pieces of bread)
2ozcomté cheese(shredded)
2ozcheddar cheese(shredded)
Instructions
Preheat oven to 425℉ (220℃). Roast the squash cut-side up for 30-35 minutes until soft. Cool, then scoop 1/2 cup and blend with 1/2 tsp olive oil, salt, pepper, paprika, and chili powder until smooth.
Fry sage leaves in 1/2 tsp olive oil until crispy, about 3-5 minutes. Remove and set aside.
Butter the outside of bread slices with mayonnaise. Spread squash mixture on one slice, top with cheese and sage leaves, then close the sandwich.
Grill the sandwich in a skillet over medium-low heat until golden and crispy, about 3 minutes per side.
Slice and serve hot. Enjoy!
Notes
For extra flavor, add a pinch of nutmeg to the squash mixture.
