Ingredients

  • 1 pound ground beef or turkey
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 4 cups chopped cabbage
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • salt and pepper to taste
  • 1 tablespoon olive oil

Instructions 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onions and sauté until translucent.
  • Stir in minced garlic and cook for another minute.
  • Add ground meat and cook until browned, then mix in cabbage.
  • Pour in tomatoes and broth, add tomato paste and oregano, then season.
  • Bring to a boil, reduce heat, cover, and simmer for 25 minutes.

Notes

For extra flavor, let the soup sit for a few hours or overnight before serving.
