Dough
6.5cupsbread flour
2cupslukewarm water
1cupwhole milk(optional swap for water)
5tablespoonsunsalted butter softened
2tablespoonshoney
3teaspoonsinstant yeast(or active dry yeast)
3teaspoonssea salt
1tablespoonunsalted butter melted(for brushing)
1tablespoonunsalted butter for tins
Instructions
Grease two loaf tins and set aside. In a large bowl, whisk water and honey, then add yeast and let activate for 1 minute.
Add flour and salt to the mixture, stir until a shaggy dough forms. Knead in softened butter until smooth, about 8-10 minutes.
Shape the dough into a ball, place in an oiled bowl, cover, and let rise until doubled, about 2 hours.
Divide the dough into two pieces, shape each into a log, and place seam side down in the prepared tins. Cover and let rise until the dough crowns over the rim, about 40-60 minutes.
Preheat oven to 375°F (190°C). Bake the loaves for 40-42 minutes until deep golden. Brush tops with melted butter, cool in tins for 10 minutes, then transfer to a rack.
