Caramel Apple Bread Pudding Recipe

A warm, comforting dessert combining bread, apples, and a rich caramel sauce for a perfect fall treat.

Ingredients

Bread

  • 1 loaf day-old brioche or challah bread, cut into 1-inch cubes

Eggs

  • 4 large eggs

Milk and Cream

  • 2 cups whole milk
  • 1 cup heavy cream

Sugars and Flavorings

  • 0.5 cup granulated sugar
  • 0.25 cup brown sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • Pinch salt

Apples

  • 3 medium apples (preferably a mix of Granny Smith and Honeycrisp, peeled, cored, and chopped)

Caramel Sauce

  • 0.5 cup unsalted butter
  • 1 cup brown sugar
  • 0.25 cup heavy cream
  • 0.25 teaspoon salt

Instructions 

  • Preheat oven to 350°F (175°C) and grease a 9x13 inch dish.
  • Whisk eggs, milk, cream, sugars, vanilla, cinnamon, nutmeg, and salt. Toss bread in custard and let sit 15 minutes.
  • Mix apples with 2 tbsp brown sugar and cinnamon. Layer bread and apples in dish, then pour remaining custard over.
  • Bake covered 30 mins, then uncover and bake 15-20 mins until golden and set.
  • Make caramel sauce: melt butter, stir in sugar, add cream and salt, simmer 5 mins.
  • Cool 10 mins, then drizzle caramel over pudding before serving.

Notes

For best results, use day-old bread to absorb the custard fully.
