A delicious and healthy layered parfait combining chia pudding with caramelized apples for a sweet treat.

Ingredients

Chia Seeds & Liquids

  • 0.5 cup chia seeds
  • 2 cups almond milk
  • 2 tsp. vanilla extract

Caramel Apples

  • 1 tbsp. coconut oil
  • 3 Granny Smith apples apples (cored and roughly chopped)
  • 1 cup coconut sugar
  • 3/4 cup coconut milk
  • 1/2 tsp. cinnamon
  • Pinch salt

Instructions 

  • Mix chia seeds, almond milk, and vanilla; refrigerate for 2 hours.
  • Heat coconut oil, sauté apples, then add coconut sugar and coconut milk; cook until thickened and apples soften.
  • Add cinnamon and salt to caramel; stir well.
  • Layer chia pudding with caramelized apples in glasses and serve.

Notes

For a creamier texture, let the chia pudding soak overnight.
