A delicious vegan parfait combining apple pie flavors with creamy coconut yogurt and chia seeds, perfect for a nutritious breakfast or dessert.

Ingredients

Yogurt and Milk

  • 1 1/3 cups vanilla coconut yogurt or store-bought unsweetened vanilla coconut yogurt
  • 3/4 to 1 cup unsweetened plant-based milk (as needed)
  • 2 to 3 tablespoons pure maple syrup (to taste)
  • Pinch sea salt

Chia Seeds

  • 1/3 cup chia seeds (plus more if needed)
  • 2 medium Granny Smith apples (peeled, cored, and quartered)
  • 1/4 cup apple juice (2 fluid ounces)
  • 2 1/2 tablespoons pure maple syrup (more or less to taste)
  • 3/4 teaspoon ground cinnamon
  • 1/8 teaspoon fine sea salt
  • 1 tablespoon ground chia seed
  • 1/4 to 1/2 cup vegan caramel (warm, not hot)
  • 1 medium Granny Smith apple (thinly sliced or diced)
  • 1/4 cup Manitoba Harvest Maple & Cinnamon Hemp Heart Toppers

Instructions 

  • Mix coconut yogurt, plant-based milk, maple syrup, and sea salt until smooth.
  • Stir in chia seeds and let sit for at least 10 minutes to thicken.
  • Prepare apple slices and cook with apple juice, maple syrup, cinnamon, and sea salt until tender.
  • Layer yogurt mixture, cooked apples, and caramel in glasses or jars, topping with apple slices and hemp hearts.
  • Refrigerate for at least 1 hour before serving for best flavor.

Notes

Use ripe apples for the best flavor and adjust sweetness to taste.
