2tbspground flax seeds(or chia seeds)

Filling
3medium-largeonions(peeled and diced)
2mediumbell peppers(diced)
2small stalksleek(finely chopped)
3clovesgarlic(minced)
3tbspchickpea flour
1heaped tbspcornstarch(or arrowroot flour)
1/3cupwater(or vegetable broth)
1tsponion powder
3/4tspsea salt(or to taste)
1/2tsppaprika
1/2tspcumin(optional)
1/2tbspfresh thyme(or 1/2 tsp dry)
1tbsptamari(or soy sauce (GF) or coconut aminos)
3/4cupplant-based milk
7ozvegan cheese(of choice (optional))

Instructions
Mix ground flax seeds with water and set aside for 5 minutes.
Combine all crust ingredients and form dough; chill in fridge.
Press dough into a greased tart dish and refrigerate.
Sauté onions, peppers, leek, and garlic until caramelized, then prepare filling.
Add chickpea flour mixture, plant milk, and tamari; simmer until thickened, then pour into crust. Top with vegan cheese and onion rings if desired, then bake at 200°C for 25-30 minutes.
