A savory vegan tart featuring sweet caramelized onions and a gluten-free crust, perfect for a flavorful meal or appetizer.

Ingredients

Crust

  • 1 cup gluten-free flour (see notes)
  • 1 tbsp gluten-free flour (see notes)
  • 1/2 cup almond flour (see notes)
  • 2 tbsp ground flax seeds (or chia seeds)
  • 5 tbsp water

Filling

  • 3 medium-large onions (peeled and diced)
  • 2 medium bell peppers (diced)
  • 2 small stalks leek (finely chopped)
  • 3 cloves garlic (minced)
  • 3 tbsp chickpea flour
  • 1 heaped tbsp cornstarch (or arrowroot flour)
  • 1/3 cup water (or vegetable broth)
  • 1 tsp onion powder
  • 3/4 tsp sea salt (or to taste)
  • 1/2 tsp paprika
  • 1/2 tsp cumin (optional)
  • 1/2 tbsp fresh thyme (or 1/2 tsp dry)
  • 1 tbsp tamari (or soy sauce (GF) or coconut aminos)
  • 3/4 cup plant-based milk
  • 7 oz vegan cheese (of choice (optional))
  • Fried onion rings on top optional

Instructions 

  • Mix ground flax seeds with water and set aside for 5 minutes.
  • Combine all crust ingredients and form dough; chill in fridge.
  • Press dough into a greased tart dish and refrigerate.
  • Sauté onions, peppers, leek, and garlic until caramelized, then prepare filling.
  • Add chickpea flour mixture, plant milk, and tamari; simmer until thickened, then pour into crust. Top with vegan cheese and onion rings if desired, then bake at 200°C for 25-30 minutes.

Notes

For best results, use fresh caramelized onions and customize toppings as desired.
