3largeYellow Onions(Thinly sliced (approx. 900g))
2tbspSalted Butter(30g)
1tbspOlive Oil(15ml)
1.5cupsGruyere Cheese(150g, freshly shredded)
1tbspFresh Thyme Leaves(Plus extra sprigs for garnish)
0.5tspCracked Black Pepper(To taste)
Instructions
Preheat oven to 375°F (190°C). Roll out puff pastry on a baking sheet.
Caramelize sliced onions in butter and olive oil over medium heat until golden, about 20 minutes.
Spread caramelized onions over the puff pastry, sprinkle with Gruyere, thyme leaves, and black pepper.
Brush edges with beaten egg. Bake for 25-30 minutes until crust is golden and cheese is bubbly.
Garnish with extra thyme sprigs before serving.
Notes
For a crispier crust, blind bake the pastry for 10 minutes before adding toppings.
