A savory tart featuring sweet caramelized onions, melted Gruyere cheese, and a flaky puff pastry crust, perfect for a sophisticated appetizer or light meal.

Ingredients

Dough

  • 1 sheet Puff Pastry (Thawed but cold) ((approx. 250g))
  • 1 large Egg (For egg wash)

Filling

  • 3 large Yellow Onions (Thinly sliced (approx. 900g))
  • 2 tbsp Salted Butter (30g)
  • 1 tbsp Olive Oil (15ml)
  • 1.5 cups Gruyere Cheese (150g, freshly shredded)
  • 1 tbsp Fresh Thyme Leaves (Plus extra sprigs for garnish)
  • 0.5 tsp Cracked Black Pepper (To taste)

Instructions 

  • Preheat oven to 375°F (190°C). Roll out puff pastry on a baking sheet.
  • Caramelize sliced onions in butter and olive oil over medium heat until golden, about 20 minutes.
  • Spread caramelized onions over the puff pastry, sprinkle with Gruyere, thyme leaves, and black pepper.
  • Brush edges with beaten egg. Bake for 25-30 minutes until crust is golden and cheese is bubbly.
  • Garnish with extra thyme sprigs before serving.

Notes

For a crispier crust, blind bake the pastry for 10 minutes before adding toppings.
