Ingredients

Dough

  • 1.25 cups all-purpose flour
  • 6 tablespoons cold unsalted butter (cut into ½-inch cubes)
  • 2 tablespoons vegetable shortening
  • 0.25 teaspoon salt
  • 2 tablespoons sugar
  • 3 tablespoons ice water (add more if needed)

Filling and Topping

  • 0.5 stick unsalted butter (4 tablespoons)
  • 0.5 cup sugar
  • 4 firm Bosc pears pears (peeled, halved, cored)
  • 0.5 teaspoon ground cinnamon

Serving

  • to taste whipped cream or vanilla ice cream

Instructions 

  • Mix flour, butter, shortening, salt, and sugar in a food processor until coarse.
  • Add ice water gradually and pulse until dough comes together. Chill for 1 hour.
  • Cook pears in butter and sugar until caramelized, about 15-25 minutes. Cool completely.
  • Roll out dough, cover pears in skillet, and bake at 425°F until golden, 30-35 minutes. Invert onto serving plate.
  • Serve warm or at room temperature with whipped cream or ice cream.
