Ingredients

Oil and pan greasing

  • 0.5 cup canola oil (plus more for greasing pan)
  • 0.75 cup sugar
  • 0.75 cup brown sugar
  • 2 large eggs
  • 1 cup canned pumpkin puree (about half a can)
  • 0.5 cup Chai Tea Latte Concentrate (such as Oregon Chai)
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon kosher salt
  • 1.67 cups all-purpose flour

Instructions 

  • Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  • Mix sugars and oil until coated. Add eggs and beat until fluffy.
  • Stir in pumpkin and chai concentrate until combined.
  • Add baking soda, baking powder, spices, and salt; mix well.
  • Fold in flour until just combined. Pour batter into pan.
  • Bake for 65-70 minutes. Cool before slicing into 8 pieces.

Notes

Ensure not to overmix to keep the bread tender.
