A comforting and flavorful casserole combining roasted potatoes, seasoned beef, and classic cheeseburger toppings, all baked to cheesy perfection.

Ingredients

Potatoes

  • 2 lbs Yukon Gold Potatoes (about 5-6 medium potatoes)
  • 2 tbsp olive oil or avocado oil (divided)

  • 1.5 lbs lean ground beef
  • 1/2 small yellow onion (diced)
  • 1/2 red bell pepper red bell pepper (diced)
  • 2 cloves garlic (minced)
  • 1 tsp sea salt
  • 3/4 cup plain greek yogurt (low-fat or non-fat is fine)
  • 1/4 cup ketchup
  • 2 tbsp dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 cup shredded sharp cheddar
  • 1/2 cup sliced pickles (optional)
  • 3 tbsp diced red onion (optional)

Instructions 

  • Preheat oven to 400°F (200°C). Dice potatoes, toss with 1 tbsp oil, salt, garlic, pepper, and roast for 25 minutes.
  • Cook ground beef in a skillet until browned. Add diced onion, garlic, bell pepper; sauté until softened. Drain excess grease if needed.
  • Mix Greek yogurt, ketchup, mustard, Worcestershire, and seasonings to make the sauce.
  • Spread roasted potatoes in a casserole dish, top with beef mixture, then 2/3 of the sauce. Stir gently to coat.
  • Sprinkle shredded cheddar on top, bake at 375°F (190°C) for 10-15 minutes until cheese melts. Broil for 2-3 minutes for golden top.
  • Let rest briefly, then serve topped with pickles, diced onions, and extra sauce if desired.

Notes

For extra flavor, add shredded lettuce or tomatoes before serving.
