Delight in these flavorful bell peppers filled with creamy Alfredo, tender chicken, and melty mozzarella for a satisfying meal.

Ingredients

Bell Peppers

  • 4 pieces bell peppers (halved lengthwise and seeds removed)

Cheese

  • 3/4 cup mozzarella
  • 1/2 cup mozzarella

Pasta

  • 8 oz orzo (I always use Barilla for the best al dente texture)

Sauce

  • 15 oz alfredo sauce (I prefer Bertolli for a rich, restaurant-style flavor)

Chicken

  • 2 cups cooked and shredded chicken (cut into 1/2-inch pieces)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning

Instructions 

  • Cook orzo according to package instructions until al dente, then drain.
  • Mix cooked orzo with Alfredo sauce, shredded chicken, garlic powder, Italian seasoning, and half of the mozzarella.
  • Stuff each halved bell pepper with the Alfredo mixture and place in a baking dish.
  • Top each stuffed pepper with remaining mozzarella cheese.
  • Bake at 375°F (190°C) for 20 minutes until peppers are tender and cheese is bubbly.

Notes

For extra flavor, sprinkle with fresh herbs before serving.
