Ingredients

Protein

  • 2 cups shredded cooked chicken (use rotisserie chicken for quick preparation)

Sauce

  • 2 cups enchilada sauce (spicy and zesty mix)

Tortillas

  • 8-10 pieces tortillas (corn or flour)

Cheese

  • 2 cups shredded cheese (cheddar or Monterey Jack)

Beans

  • 1 can (15 oz) black beans (drained and rinsed)

Dairy & Vegetables

  • 1 cup sour cream
  • 1/2 cup green onions (chopped)
  • 1 medium bell pepper (diced)

Instructions 

  • Preheat oven to 350°F (175°C).
  • Mix shredded chicken with enchilada sauce.
  • Layer chicken mixture, tortillas, cheese, and beans in a baking dish, ending with cheese on top.
  • Bake for 25-30 minutes until cheese is melted and bubbly.
  • Let rest 5-10 minutes, then garnish with sour cream, green onions, and bell pepper before serving.
