A deliciously cheesy and savory cornbread baked in a cast-iron skillet, perfect for any meal.

Dry ingredients

yellow cornmeal

all-purpose flour

garlic powder

kosher salt

shredded Cabot Seriously Sharp Cheddar Cheese (divided)

diced green chilies, drained

buttermilk

unsalted butter (melted, divided)

fresh corn (sliced off of cob (~2 ears))
Instructions
Preheat oven to 350°F and place a 10" cast-iron skillet inside.
Mix dry ingredients in a bowl; add cheese, chilies, onions, buttermilk, 3 tbsp melted butter, egg, and corn; stir until combined.
Remove skillet, brush with remaining butter, pour batter, and sprinkle with remaining cheese.
Bake for 40-45 minutes until golden and a toothpick comes out clean.
Cool slightly before serving directly from the skillet.
Notes
Serving in the skillet helps keep the cornbread warm; use a hot pad when handling.
