A hearty and comforting soup combining tender chicken, brown rice, and fresh vegetables, perfect for a wholesome meal.
Ingredients

(or about 10 baby carrots)

herbs (thyme, parsley, or rosemary tied together with kitchen string)
Broth and liquids

rotisserie chicken meat, lightly chopped
(about 1 rotisserie chicken)

Instructions
Heat olive oil in a large pot, sauté garlic, shallots, celery, carrots, and salt until fragrant, about 5-6 minutes.
Add rice, toast for 1-2 minutes, then add herbs and bay leaf.
Pour in broth and water, bring to a boil, then simmer covered for 35 minutes.
Remove herbs, add chopped chicken, adjust water/broth if needed, and season with pepper.
Simmer briefly, then serve warm or store. Add more water/broth to thin as desired.
Notes
Feel free to customize with your favorite herbs or add vegetables for extra flavor.
