A flavorful and hearty dish combining tender chicken with roasted butternut squash and fresh vegetables, perfect for a comforting meal.

Ingredients

Protein

  • 1 pound boneless, skinless chicken breasts (cut into 6 pieces (2 breasts))
  • 1/4 cup flour
  • 3 tablespoons grated Parmesan cheese (sandy texture)
  • 1/2 teaspoon salt (plus more as needed)
  • 1/2 teaspoon pepper
  • 1 teaspoon paprika (divided)
  • 3 tablespoons olive oil (divided)
  • 4 tablespoons unsalted butter (divided)
  • 4 cups diced butternut squash (see note 1)
  • 1 teaspoon minced garlic
  • 1 teaspoon dried oregano
  • 2 cups green beans (cut in half)
  • 1 1/2 tablespoons fresh thyme leaves (plus more for garnish)
  • 1 lemon for serving (optional)

Instructions 

  • Dice squash, trim and halve green beans, and mince garlic.
  • Mix flour, Parmesan, salt, pepper, and 1/2 tsp paprika. Pound chicken to 1/4-inch, coat with oil, then dredge in flour mixture.
  • Cook chicken in hot oil and butter until golden, then set aside. Repeat with remaining chicken.
  • Add remaining butter, cook squash with garlic, paprika, and oregano until charred, about 4-5 minutes.
  • Add green beans and thyme, cook until tender-crisp, about 5 minutes. Return chicken on top, squeeze lemon, garnish, and serve.

Notes

Ensure squash is evenly charred for best flavor. Adjust salt to taste before serving.
