A flavorful roasted chicken with sweet potatoes and red onion, seasoned with spices and finished with fresh parsley.

Ingredients

Protein

  • 4 pieces bone-in, skin-on chicken thighs

Vegetables

  • 2 medium sweet potatoes
  • 1 large red onion

Seasonings & Oils

  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley

Instructions 

  • Preheat oven to 400°F (200°C). Toss sweet potatoes and onion with olive oil and spices, then spread on a baking sheet. Place chicken thighs on top, skin-side up.
  • Roast for 30-35 minutes until chicken skin is crispy and internal temperature reaches 165°F (74°C). Rest for 5 minutes, then garnish with parsley before serving.

Ensure chicken skin is crispy for best texture.
