Instructions
Preheat oven to 400°F (200°C). Toss sweet potatoes and onion with olive oil and spices, then spread on a baking sheet. Place chicken thighs on top, skin-side up.
Roast for 30-35 minutes until chicken skin is crispy and internal temperature reaches 165°F (74°C). Rest for 5 minutes, then garnish with parsley before serving.
