Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts
  • 2 medium sweet potatoes, peeled and cubed

Vegetables

  • 1 cup broccoli florets

Seasonings and Oils

  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon ground cumin
  • to taste Salt and pepper

Garnish and optional

  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Lemon wedges optional, for serving

Instructions 

  • Preheat oven to 400°F (200°C). Toss sweet potatoes with 1/2 tablespoon olive oil, paprika, garlic powder, cumin, salt, and pepper. Roast for 25-30 minutes.
  • While sweet potatoes roast, season chicken breasts with salt, pepper, and a little paprika. Cook in a skillet with remaining olive oil over medium heat until cooked through, about 6-8 minutes per side.
  • Steam or blanch broccoli florets until tender, about 3-4 minutes.
  • Slice cooked chicken and assemble bowls with roasted sweet potatoes, chicken slices, and broccoli. Garnish with chopped parsley and lemon wedges if desired.

Notes

For extra flavor, add a squeeze of lemon or a drizzle of tahini.
