A healthy and easy meal prep recipe featuring tender chicken, sweet potatoes, and broccoli, perfect for a nutritious week ahead.

Ingredients

Protein

  • 2 pounds chicken breast, diced

Vegetables

  • 4 medium sweet potatoes, cubed
  • 2 cups broccoli florets

Fats & Oils

  • 1 tablespoon olive oil

Spices & Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Herbs

  • 0.25 cup fresh parsley, chopped

Instructions 

  • Preheat oven to 400°F (200°C).
  • Mix chicken, sweet potatoes, olive oil, garlic powder, paprika, salt, and pepper.
  • Spread on a baking sheet and bake for 25-30 minutes.
  • Add broccoli in the last 10 minutes of baking.
  • Garnish with parsley, cool, and portion.
