Instructions
Mix olive oil, lemon juice, soy sauce, oregano, garlic powder, paprika, salt, and pepper to make the marinade.
Marinate chicken cubes in the mixture for 15-20 minutes. Prepare vegetables while marinating.
Thread chicken and vegetables onto skewers, alternating ingredients. Soak wooden skewers in water beforehand if used.
Preheat grill to medium-high. Grill skewers for 10-15 minutes, turning every 3-4 minutes until cooked through and vegetables are tender.
Remove skewers, let rest briefly, then garnish with fresh herbs and serve.
Notes
Soaking wooden skewers prevents burning. Marinate for more flavor if desired.
