A quick and healthy one-pan meal combining tender chicken with colorful vegetables, perfect for a weeknight dinner.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into strips
  • 1 teaspoon paprika
  • 0.5 teaspoon garlic powder

  • 1 tablespoon olive oil (for vegetables)
  • 1 small yellow onion, sliced
  • 1 medium zucchini, chopped
  • 2 cups broccoli florets
  • 1 cup grape or cherry tomatoes, halved
  • 3 cloves garlic, finely minced
  • 1 tablespoon chopped fresh parsley, for garnish

Instructions 

  • Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
  • Season chicken with paprika, garlic powder, salt, and pepper; cook until browned and cooked through, about 5-7 minutes.
  • Remove chicken; in the same skillet, sauté onion for 2 minutes, then add zucchini, broccoli, and tomatoes; cook for 6-8 minutes.
  • Add garlic and cook for 30 seconds, then return chicken to skillet and heat through for 1-2 minutes. Garnish with parsley before serving.
